Directions

1. For the rice: Heat 1 tablespoon of olive oil in a pot, add the spring onions and sauté for a minute. Stir in the garlic and rice, and sauté for another minute.

2. Add the tomato sauce and water, and season to taste. Bring to a boil, turn down to a simmer, then cook for 35-40 minutes or until the rice is cooked through and has absorbed all the liquid.

3. Stir in the butter, season to taste, cover and leave to sit for 10 minutes.

4. For the chicken: drizzle the chicken pieces with olive oil, seasoning, lemon juice and honey, then toss well to coat. Cook in the air fryer at 200ºC for 30 minutes or until the chicken is cooked through.

5. Serve the chicken on a bed of rice.

For the rice:

  • 1 tbsp. (10ml) Forage and Feast Cold Extracted Extra Virgin Olive Oil
  • 3 spring onions; chopped
  • 1 tbsp. (10ml) garlic paste
  • 1.5 cups (375ml) brown rice; washed
  • 1 Forage and Feast Cherry Tomato and Aubergine Pasta Sauce
  • 3 cups (750ml) water
  • Salt and pepper to taste
  • 2 tbsp. (20ml) butter

For the chicken:

  • 12 Simple Truth Free-Range Chicken Drumsticks
  • 2 tsp. (10ml) Forage and Feast Cold Extracted Extra Virgin Olive Oil
  • 2 tbsp. chicken spice
  • Juice of 1 lemon
  • ¼ cup (60ml) Forage and Feast Wildflower Honey
